Update

Hey there, happy Friday! I sure am glad that the weekend is finally here. This week seemed to be SUPER long, not sure why! Maybe because I started school again, hmmm.

Posting is going to be very sporadic in the days to come. Since my summer school classes are condensed, I literally have like 3-4 quizzes/exams each week on top of class, homework, and work. It’s already crazy to say the least!

I started James Wilson’s program over again from week 13, so I’m back to full-body circuits and only 4 days a week. I’m actually looking forward to it to give my body a break from the body part splits.

I’ve been waking up early on my workout days during the week to squeeze in the workouts. I LOVE that they are short and intense. In and out of the gym in under an hour! I don’t do much cardio, either. Usually about 12-15 min sprints and cool down.

I don’t like to workout for any longer that an hour. Nobody got time fo that.

I’ve also been getting very few pictures of my meals lately, but here are a few things I have been eating!

Scrambled eggs, Ezekiel english muffin, strawberries.

Homemade turkey burger on a grilled portobello mushroom cap, with a side of roasted veggies with olive oil.

This was REALLY good. Sautéed spinach, sautéed zucchini and summer squash, grilled chicken, avocado, and goat cheese. Heavenly combo.

Monday, you come so sooon….

First day of summer classes start for me today. AH! It’s a condensed semester, so it will be a bit craaazy, but I’m ready! I had a pretty great weekend since it was my dad’s birthday and mother’s day.

Lunch with dad for his birthday. We went to a really nice restaurant in downtown Delray beach. It was a beautiful day! I was a little disappointed in the salad, how much chicken is that.. like 2 oz? Oh well, the company is what mattered!

Gym with the madre on Saturday. Kicking her butt into shape! She’s back on the clean eating train with me Winking smile Love helping people with nutrition and fitness. She’s always my guinea pig.

Kombucha love <3 First time trying this flavor, I LOVE. I think it’s one of my new favorites.

We took a boat after the gym on Saturday to peanut island. It was gorgeous out!

We got quite a bit of sun before the rain came down. And now I’m a little burnt and itchy!

Sunday I had to work, but I got off at 2, so we celebrated mother’s day afterwards! Apparently it’s mother’s day for a few weeks Winking smile

We went to Christopher’s Kitchen, a plant-based organic restaurant. I went here with Cait back in December!

I was ready to chew my arm off, so we ordered an app to start.IMG_1562

The caprese salad – sliced tomato, macadamia ricotta, fresh basil, balsamic, and olive oil.

I decided to get something that I normally wouldn’t order..

I went with the Indian Curry Warm Grain bowl – curried green lentils & chickpeas over quinoa, sweet potato, seasonal vegetables, fresh herbs, sesame seeds and sprouted almonds.

It was good, but WAY too spicy for me. My mouth was on fire and my mom and I could only finish about half before dying. Our server took it off the check though since she told me it was just a little “kick”. Great service!

My mom ordered the Asian Noodles – zucchini noodles, cabbage, mango, avocado, cucumber, red pepper, pea shoots, mixed herbs, sesame seeds, almond ginger dressing.

Um yeah, this was amazing. I ended up stealing most of it Winking smile

After a delicious late lunch, we went shopping a bit and then went to see this!IMG_1568

I LOVED it. It was amazing, just as I thought. If you haven’t seen it yet, get on it.
