First Attempt at Spaghetti Squash

New Years Day wasn’t all that eventful for me. It was mostly just settling back into the normal routine and getting things done. Wow, I sound old.

First thing on the agenda? Wash my car. It was in need of some major TLC, and I feel so much better that I got it clean.

I’m pretty sure I’m the only person who was out and doing something productive yesterday morning.

Christmas decorations came down shortly after. I love having a fake tree because it literally took 5 minutes to throw it in the box.

Taking the tree down made enough room for yoga to ensue. Sunday’s are my rest day, so I just did a gentle yoga in order to stretch out my muscles.

I’m a firm believer in rest days (they are a must) so I didn’t do anything too strenuous. However, I did want to get in a little yoga since the class was cancelled the day before.

The rest of the day was pretty relaxing. It was a beautiful day outside, so I finally got out to tan my pale self!

Dinner

For dinner, I attempted something I never have before.

Spaghetti squash!!! I was a little too excited for my own good. I think I can officially call myself a foodie? That, or I have no life and I’m just weird.

I microwaved the full squash for about two minutes in order to soften the skin. Afterwards, I cut down the middle lengthwise, and scooped out the seeds.

Preheat the oven to 375, and baked for about 35 minutes. I started with the squash open side down, then flipped it about halfway through.

I had some leftover green beans that needed to be cooked, so I threw them on the same baking sheet with some olive oil, salt, and pepper.

I had to take the green beans out early because they were crispy before the squash was done.

Once the squash is finished, you take two forks and get out all the spaghetti squash.

I mixed the spaghetti squash with some sauce, and served it with the roasted green beans, and Pecan Crusted Orange Roughy.

I absolutely loved the spaghetti squash, and I will definitely be buying this more often.

Pretty great dinner for having NO food in the house.

After dinner, we caught a 7:30 movie to see The Girl with the Dragon Tattoo.

This movie was INTENSE. I was honestly scared at some points and some of it was just hard to watch. It was a looong movie as well, but it was really good.

Today is devoted to grocery shopping, working out, and packing!

  6. Glad it turned out well! I’ve had spaghetti squash but never actually made it. I was actually thinking about tackling it next week because I’ve had a major craving for it :)

    Oh I love spaghetti squash! It’s a staple in my weekly meals. I usually make a tomato sauce and toss it with a protein. It’s also good with cherry tomatoes, walnuts and feta with some evoo. Oh yumm!
