Healthy Sausage and Peppers

Hi there, how’s everyone’s weekend so far? I woke up a lot later than usual this morning and it was pure bliss.

This is me right now. Iced coffee and blogging, nothing new here. I think I’m always eating or drinking while blogging, haha.

Yesterday for my workout I did something I haven’t done in a LONG time.

Spinning! I loved it. I used to go literally like three times a week but then stopped going all together once I started training for my half.

I can’t wait to get back into it. It’s definitely an awesome workout. I was drenched by the end of it.

Today I have a run planned but since it’s already so late and I just had breakfast (kinda?) I need to wait longer to digest. I’ll probably be heading to the treadmill once again.

Dinner last night was DELICIOUS. I found these all natural chicken sausages at the store the other day and picked up a pack.

I’ve never had this brand but they looked really good and had pretty great nutritional stats.

I decided to make a healthier version of sausage and peppers like my dad used to always make.

First I roasted a potato that I cut into wedges and seasoned with basil.

Then I cut up some red, green, and yellow peppers and onions.

I then threw the sausages in a pan and cooked them for about 8 minutes.

Once they were almost cooked, I cut them up and put the onion, peppers, and some garlic in the pan along with the sausage.

I let that cook for a little while and once the peppers were almost soft I put the potatoes in and topped with some more basil and pepper.

Yuuuuuum. I let that cook until the peppers were cooked.

This meal was so easy and one of the best I’ve made in a while. Everything worked so well together.

  3. Dinner looks delish. I am a big sausage fan… I love the little pigs in blanket ones although they are not quite as healthy!

    I have only done a couple of spinning classes but I think I might do a few more as cross training,

  4. i love spinning, i always find that different instructors give a different workout. like the fast pedaling rather than the hills though lol

    i love spinning – but only with my favorite teacher! there’s a few teachers at my gym that don’t play music that i like or have habits that annoy me (like singing along to the songs and saying cheesy phrases like “victory is ours!”). but the one teacher that i love teaches a killer class and i always leave drenched!

    I’ve only done a spin class once and I liked it, but I still prefer to run.

    I reserve my speed work for the treadmill. It’s not boring if you are struggling to breathe for parts of the workout.
