Most Random Meal Ever

Hello from West Palm Beach! I missed this face too much.

I actually got here earlier but I was unpacking, having dinner, and just enjoying the fact that I am finally on spring break, woo!

I took my midterm in 30 minutes flat and booked it home. I’m so excited to just relax and not have to worry about too much for a full week.

Quick update on my new headband. (Please excuse the classy bathroom mirror pic).

I wore it to Bikram yoga earlier and despite the fact that my hair fell out, the headband stayed! Officially obsessed, I want one in every color now.

I have yet to run in it or anything but I’ll keep you posted.

Lunch

I wanted to share what I had for lunch earlier. Operation – use up all the food I already have – went pretty darn well.

This is the most random thing I’ve ever made, but somehow it came together well.

  • I took frozen broccoli and a frozen Asian stir fry mix (green beans and red peppers), put a bit of water in it, and brought it to a boil.
  • Once boiling, turned it to low, covered, and simmered until tender.
  • Add fresh carrots and let cook/simmer.
  • Add can of tuna.
  • Add black beans.
  • Add goat cheese.

I think the goat cheese made the whole dish Winking smile

Random? Very. However, it was really good and SO filling. It kept me full for a while. I’ll definitely make this again because it was so easy.

Dinner

I absolutely love this new plate my mom got. How cute is it?

My mom made me dinner, how sweet of her. We had pork chops with apple sauce (added after the picture), brussel sprouts, and brown rice.

I’ll be honest, I’m not the biggest fan of pork chops. Definitely not my favorite type of meat since I feel like there is more fat and bone than actual meat.

Anyway, I’m literally off to bed (grandma alert). I woke up too early this morning and went to bed a little later than usual last night. I’m thinking tomorrow will be a sleep-in kind of morning Winking smile

  1. Your dog is the cutest dog ever!! :) I love throwing random meals together. I sometimes crave different things so I’ll just throw together what I’m craving and it will usually be a success. :) I really don’t like pork, because when I was little, I was obsessed with the movie “Babe,” and my brother informed one day that we were eating Babe. After that, if I knew it was pork, I wouldn’t touch it. haha

  2. i’m not a super huge fan of porkchops either… although, they do taste a lot better with some applesauce on them. ;) my favorite form of protein is chicken for meat and greek yogurt otherwise.

    most of the time my “throw things together” doesn’t turn out so well, but occasionally i have a winner :)

  4. Isn’t it funny how “random meals” are often the most satisfying and delicious? Some of my favorite combinations were created when I didn’t know what to eat and literally threw the contents of my refrigerator into a bowl! The key for me is adding cheese–it always makes things taste good!

    My favorite form of protein is probably salmon, however I LOVE eggs and egg whites for their versatility.:)

  5. Aww your puppy is so so cute :) Random meals always turn out to be the best in my opinion… you get so many flavors and such satisfaction! As you did!
    I would say fish or chicken are my favorite sources of protein.. I like vegetarian options as well, but these just have so much more

  6. Some of my favorite meals are the ones where I just throw a bunch of stuff together from my fridge. A couple of days ago that’s exactly what I did for lunch. I cooked up some quinoa and added every veggie I could find (brussel sprouts, carrots, asparagus) and then mixed in black beans and blue cheese. The cheese always makes the dish!

  7. Your lunch sounds so good! I love throwing random stuff in a bowl! My philosophy is that anything tastes good when you serve it in a bowl with rice and some kind of sauce haha. ;)

  9. I am glad to hear the head bands are so great! Definitely on my wish list! :-) I love all types of protein: chicken, lean beef, eggs, Greek yogurt, peanut butter. Keeps me full without weighing me down!

  12. Random meals are the best! They’re like little trial and errors. :-) I love to make random salads and throw together a bunch of ingredients. It’s hard not to make it work if you have a “sweet” or “savory” idea in mind, you know?

  13. your meal actually sounds pretty tasty given the randomness of it!! I love goats cheese, best cheese ever. my favourite protein source is cottage cheese.

  14. I don’t eat pork chops often at all, so it’s always a sort of welcome surprise when they pop up for dinner. PS: Such a pretty plate! I’m so on a kick for pretty kitchen things these days :)
