Veg Pledge

Hello hello! So since I haven’t shared any of my eats from the weekend, I figured I’d pile all of them in one little post so you can see them all.

And since Jenn has established that it is still the veg pledge challenge, I have lots of salads to share. Not going to lie, salad is one of my favorite foods ever.

They are just so versatile and delicious might I add.

Grilled chicken, cucumbers, beets, tomato, goat cheese.

Whole foods made its way into my weekend ; ) I got tofu and veggies. I get tofu EVERY time I go to whole foods, they prepare it soo good.

Clean eating turkey meatloaf with a hefty serving of asparagus.

Pumpkin oats in a jar which I haven’t had in forever. I threw some of this protein powder in there..

Chicken, strawberries, and goat cheese.

A broccoli and cheese omelet – 1 egg, two (or 3?) egg whites.

And an AMAZING protein smoothie for the ride home back to Orlando. I put a scoop of that pea,hemp,rice,chia protein powder, a cup of almond milk, ice, pumpkin, and cinnamon.

 

So I think I’m doing pretty well with my veggie servings, dontcha think?

  3. Mmmmm goat cheese! It was only recently that I discovered my love for that deliciousness :) And that nut butter from Target is so so good, reminds me that i need to pick up more soon!
    I could eat apples and greek yogurt every.single.day and not get sick of them, oh wait, I do that :)

  7. I am SO with you on the salad thing. I literally crave one at the end of the day if I don’t have one for lunch. My friends think I’m crazy but I embrace my veggie-loving self! Your omlettte looks pretty much divine.

    P.S. – Life’s Basics has become my new favorite protein powder over the past few months. It is what I use to make my chocolate protein oats. I’m obsessed. :-)

  9. All of the salads sound delicious. I love salads, too! BUT I always have to have either a hard-boiled egg, chicken, or bacon on top ;-) I need to buy goat cheese ASAP. I went through a goat cheese phase and then went out. Speaking of cheese, the broccoli and cheese omelet sounds so yum. I’m guessing you steamed the broccoli then added it to the eggs?

  10. you know i can (and do!) eat peanut butter every single day and never get sick of it. ;) you did indeed do a great job of getting in lots of veggies! strong work! i have a hard time picking only one veggie as my favorite, but brussels sprouts, spinach, and sweet potatoes are probably my top faves.

    My favourite way to get an extra serving or two of veggies in is by making my protein shakes ‘green’. I toss in a cup or two of spinach or kale along with the fruit and can’t even taste the greens!

    Lately I’ve had an obsession with pears. I’ve been eating 1-2 (sometimes 3) a day for the last 4 months. I’m addicted.

    My favorite vegetable.. probably onions. They make everything taste much better.

  19. Peanut butter and cereal are definitely items I can eat everyday and not get sick of them! I love so many veggies, but I think my all-time favs are roasted Brussels sports and broccoli. So good!

    yum!!!! they look sooo good, do you put any dressings on your salads? like olive oil or do you just eat it plain?

    • I make my own dressing – 3/4 c. olive oil, 1/4 c. balsamic, 1 tbs. minced garlic, pepper. I throw that in a shaker and shake away so I have dressing to last a while!

    you’re a veggie queen like me!! your meals look a LOT like my lunches and dinners. i think the only thing you posted that i don’t eat on a regular basis are the overnight oats (i’m not an oats person or a protein powder person) and the smoothie (also not a smoothie person). but whole foods is SOOO good! the omelet looks super satisfying too.

  34. Whole Foods tofu is fan-freakin-tastic! I wish they’d share their secret recipe with us!

    Your broccoli cheese omelet looks so good! I love broccoli-cheese soup, casserole etc., but never thought to combine it with eggs. I’m thinking I have a new breakfast cooking up in the kitchen tomorrow!
