Recent Breakfast and Live Fit

Does anyone ever have those mornings where they wake up and feel legit drunk?

I’m not sure if it’s because I’m sick, but I slept for at least nine hours last night and I woke up feeling exhausted still with a stuffy nose. Boo.

And no, I did not even go out last night, I was in bed by 10:30. Being sick isn’t so fun.

Hot tea helps Smile I’m not like deathly sick, just a little sore throat, stuffy nose only when I wake up, and tired.

Tomorrow starts week 7 of the Live Fit trainer! That means I’m halfway done!

I am SO sore from yesterday’s leg workout. There were a bunch of supersets and we are still lifting heavy. I walked out of there with major jelly legs! Love it though.

There’s not much of an update other than I am still loving it and still building muscle. I love that the workouts are always changing so I’m literally never bored.

It’s also crazy to say that cardio is not my favorite part of this trainer which I have mentioned before, the weights are just so much more fun.

Anyway, I also love how creative this has made me. I’m always in the kitchen trying to come up with new ideas for clean eats.

Usually when I find something I like, I stick with it for a while. I’ll eat it almost everyday, but then after a while I get bored with it. What I’ve been eating for breakfast as of late?

Protein pancakes! These babies are really easy to make and have a whopping 40 g of protein.

They’re not really fluffy or anything like regular pancakes, but they are perfect for me. I can eat anything really and be happy.

  • 1/4 c. oat flour
  • 1 scoop protein powder
  • 3/4 c. (or 4) egg whites
  • cinnamon
  • stevia

Mix it all together, and cook. Today I even sliced some strawberries and put then in the batter while they were cooking. You can top them with whatever you’d like.

This morning I topped mine with some jelly and sunbutter. Yum!

These are perfect for meal one, and I eat all three.

And yes, I grind my own oat flour because I can’t find gluten free oat flour anywhere.

It definitely doesn’t come out as fine as store bought, but I’m sure it’s less expensive as well so I can deal with it being a little grainy.

    These pancakes sound delicious-a few questions I have: can you make your own oat flour just by pulsing quick oats in a blender until fine? Also, can you recommend a favorite protein powder? I’ve never tried any before so that aisle at the grocery is a little overwhelming!

    • Yup, I do mine either in the blender or food processor! It’s as simple as that :D
      My favorite protein powder is sunwarrior and I order it online, but it’s pretty expensive so only when I have the money.
      MRM whey protein is good too, a LOT cheaper, which I found online as well. I also like life’s basic pea,hemp,rice,chia protein powder if you don’t want whey. Just look for minimal ingredients, all natural :D

  9. I grind my own oat flour too! Those pancakes look and sound amazing. I’m so happy you are loving the trainer and getting nice and strong! I am really boring and eat the same things all the time so I haven’t tried too many new things lately. Last night I made shirataki noodles which I haven’t had for a while and pup my mom’s homemade pesto on them. That was pretty tasty! You probably saw on Pinterest already :)

  11. I hardly ever eat pancakes but I have been seeing them around the blog land a lot lately! These sound delicious- maybe with a banana added in ;-)

    By the way, I just so happened to come across your comment on Food and Fitness Diaries about amenorrhea and I have the exact problem. Last year, mine came twice and this year I’ve had it once. I went to the doctor whom prescribed me with BC, I quit taking it though because I hate the thought of BC (but I’m also not trying to get pregnant.) If you ever need someone to talk too, don’t hesitate! It seems like we have more in common than we think :-)

    • I used to never eat pancakes but I’m on a kick! And wow, we are seriously twins haha ;D
      But I haated birth control and I’m convinced that’s what caused my amennorhea.. I was irregular before, but this really screwed me up. Oh well.. thanks so much girl, I’m here if you need to talk as well! <3

  13. I switch up my dinners, but I eat the same breakfast (oatmeal) and lunch (hummus sandwich) a lot! I can’t help that they’re so good that I crave them all the time. :P

    I have made my own oat flour, so easy and much cheaper :) When I like a meal/dish/particular food, I definitely eat it to death until I get sick of it. I want to try and change things up a bit more though!

  19. Those pancakes sound so yummy and full of protein! The only ‘flour’ I’ve ever made was by grinding up whole grain cereal and using that as the flour base in my pancakes. I would love to try and make oat flour and I bet oat bran would work great as well.

  21. I go through moods with my food. I can go in a rotation of favorites for a while or I can be into new things all the time. Usually dinners are much more excited.

  23. I woke up the exact same way this morning…..ugghh I hate being sick! The hubby was sick last week so I knew it was bound to happen sooner or later.

    I LOVE Protein Pancakes- I have them prob 5 of the 7 days for breakfast each week! I usually eat a lot of the same foods, or different versions of the same foods for a little variety.

  30. I’m fighting a bug too, and woke up this morning feeling *exactly* the same way you described: drunk and exhausted! I almost skipped my workout, but I’m glad I didn’t because it actually made me feel a million times better. :)

    Yum, I’m loving your pumpkin protein pancake recipe! Do they taste similar to Jamie Eason’s pumpkin protein bars? I might have to abandon my morning egg routine and try these instead. :)

    I’ve never ground my own flour because oats don’t seem to bother my gluten sensitivity, but I probably should because it would save some money. Plus, I kind of like grainy-textured baked goods!
