Failure to Easy

I’m not sure if I want to say “it’s finally Wednesday”, or “it’s only Wednesday?”

I’ve been busy with school and will get even busier as the week progresses. Finals week will be the death of me. Basically all I do it eat, gym, sleep, class, study. Sounds about right.

I did manage to capture my meals yesterday though! It was a looong day. I woke up at 5:45 because I had a speech to present. I did it on clean eating – of course I could talk about nutrition and fitness all day : )

I actually woke up craving protein pancakes. I realized I had no egg whites, so I tried to use almond milk in place of them (I have no idea why I thought that would work), and they never cooked in the middle.

Fail. But ya can’t blame me, it was earlyyy.

I was really annoyed at that point and wanted food and coffee stat, so I rolled with the easy route. Greek yogurt, strawberries, love grown granola.

I went on over to the gym a little while after this for a leg workout! My fave.

After the gym I fueled with a refreshing smoothie. (I was craving it)

Does anyone else drink smoothies WAY too fast? I swear, it’s hard for me to slow down hah.

Right before my speech I got a little creative with lunch. I saw this recipe on Chelcie’s blog and I actually had some broccoli slaw in the fridge that needed to be eaten, so I used her recipe as inspiration.

I also had some squash that needed to be eaten so I used that as well.

I added brown rice and turkey muffins into it! So yummy all together.

After my speech, I had pumpkin protein bars which I love.

These were straight up eaten in the car after my speech, haha.

Spinach, asparagus, hard-boiled egg white, goat cheese, tomato, grilled chicken.

This was delicious all together (I say that about everything). I love hard-boiled egg whites, but the hard-boiled egg yolks freak me out! I love yolks, but runny or scrambled.

So I’m actually writing this post after dinner, so I’m sure some eats will be occurring afterwards. I’m guessing it will include the usual:

Hard-boiled eggs, yay or nay? Yolk or no?

I like hard boiled eggs, but not the yolk. I love the yolk otherwise though.

What is a fast breakfast option that you like?

Yogurt is usually my go-to if I have a fail in the kitchen or I’m running late.

This is random, but when you prep meat and veggies ahead of time (if you do), do you reheat them or just eat them cold?

Sometimes I eat them cold, actually a lot of the time! It depends I guess though.

  3. So happy to hear someone agrees with me about hard-boiled yolks. I eat them but the texture is so chalky to me. Cooked any other way and they don’t bother me at all. I want to try making those turkey muffins. Did you share a recipe?

  6. Greek yogurt+fruit+granola is my main go-to breakfast when I have to move fast. Even faster when I put it in a solo cup with a plastic spoon. It’s like a party at 7am haha.
    I love hard boiled eggs, but whenever I make them the grey ring appears around the yolk. I’m too impatient to stand near them and get the timing exactly right. But I do love them.

  7. I definitely agree on yogurt being my go-to when I need something quick…always greek too because of the protein and how it helps to keep me satiated! I loveee hard boiled egg whites… not the yolk so much though. I only like the yolks when they are still drippy! Perfect for dipping bread into :)

    I love my protein oats in the morning. I make them pre-gym, and leave them in my car for when I’m done with my workout. It’s odd, but they’re good!

    I made the pumpkin bars for the first time this week. They’re quite good, but I liked my knockoff version better. I just wish I could remember how I made them!

  15. I never eat hard boiled eggs- I guess I’ve never really thought to as a different way to cook the egg whites. I agree, I prob wouldn’t eat the yolk unless it was drippy!

    I hate fails in the kitchen! But I also have a bad habit of getting into a rut with breakfasts. :) My go-to is GF toast, nut butter and a half of a banana. Yum!
    I love hard-boiled eggs! It usually depends on what kind of mood that I am in if I eat the yolk, but I do like it.
    I mostly eat the meat cold, especially if it’s on a salad :)

  24. Pancakes are so finicky! I always get scared with experimenting with them because one mistep can just totally ruin them. :P Good thing you had a back up plan! Yogurt + fruit + cereal is my go to breakfast when I’m in a rush!

  28. Your daily schedule sounds a LOT like mine. You’re not alone, Brittany. We can dooooo this! For me, I’m all about chocolate protein oats for a fast breakfast! Every day, actually. It’s a raving obsession. When I prep my veggies, I usually eat them cold! It might be weird but I like ‘em that way too!

  32. Oh girl, the “eat, gym, sleep, class, study” thing is going to be my life next week too! Just imagine how *amazing* it will feel to be done with everything though! :-D

    I LOVE hard cooked eggs and literally boil 2 dozen each week (not kidding!). I like them best when the yolk and white are eaten together (in egg salad), but because I eat so many, I usually just go for the white. I kind of have a one yolk-a-day rule, but sometimes I break it. :-)

    Quick breakfast: see above…(hard-cooked eggs). I’ll usually add a banana with peanut butter. It’s such an easy meal, but keeps me full for hours.
