I’m not sure if I want to say “it’s finally Wednesday”, or “it’s only Wednesday?”
I’ve been busy with school and will get even busier as the week progresses. Finals week will be the death of me. Basically all I do it eat, gym, sleep, class, study. Sounds about right.
I did manage to capture my meals yesterday though! It was a looong day. I woke up at 5:45 because I had a speech to present. I did it on clean eating – of course I could talk about nutrition and fitness all day : )
I actually woke up craving protein pancakes. I realized I had no egg whites, so I tried to use almond milk in place of them (I have no idea why I thought that would work), and they never cooked in the middle.
Fail. But ya can’t blame me, it was earlyyy.
I was really annoyed at that point and wanted food and coffee stat, so I rolled with the easy route. Greek yogurt, strawberries, love grown granola.

I went on over to the gym a little while after this for a leg workout! My fave.
After the gym I fueled with a refreshing smoothie. (I was craving it)
Does anyone else drink smoothies WAY too fast? I swear, it’s hard for me to slow down hah.
Right before my speech I got a little creative with lunch. I saw this recipe on Chelcie’s blog and I actually had some broccoli slaw in the fridge that needed to be eaten, so I used her recipe as inspiration.
I also had some squash that needed to be eaten so I used that as well.
I added brown rice and turkey muffins into it! So yummy all together.
After my speech, I had pumpkin protein bars which I love.
These were straight up eaten in the car after my speech, haha.
Spinach, asparagus, hard-boiled egg white, goat cheese, tomato, grilled chicken.
This was delicious all together (I say that about everything). I love hard-boiled egg whites, but the hard-boiled egg yolks freak me out! I love yolks, but runny or scrambled.
So I’m actually writing this post after dinner, so I’m sure some eats will be occurring afterwards. I’m guessing it will include the usual:
Hard-boiled eggs, yay or nay? Yolk or no?
I like hard boiled eggs, but not the yolk. I love the yolk otherwise though.
What is a fast breakfast option that you like?
Yogurt is usually my go-to if I have a fail in the kitchen or I’m running late.
This is random, but when you prep meat and veggies ahead of time (if you do), do you reheat them or just eat them cold?
