Happy Earth Day! Did anyone even know that holiday was today?

I’ve been stuck inside all weekend doing tons of stuff for school. Summer is SUCH a tease right now. Next Monday I will be completely finished and moving out of Orlando back home for the summer, ah!

Not only have I had to study for four tests, I decided to pick up an extra story for the school newspaper on Avoiding the Freshman 15.

It was just a column so I finished it fairly quickly. Needless to say, I have seriously been swamped.

On a seriously random note,

I had an almost empty peanut butter jar last night. I thought about making some overnight oats, or OIAJ, but then I thought I would do something different.

I put my usual bedtime snack, whipped cottage cheese, in the jar! Best idea ever. I got some peanut butter with every bite.

Anyway, today is  a rest day that I am seriously welcoming with open arms. I am SO sore from yesterday’s back workout. I love it.

I just finished week seven of the Live Fit Trainer, and I’m excited for week eight! It will practically be the same, but I am loving all the exercises.

PWO meal from yesterday: tuna with a ton of veggies, nooch, and a bit of chickpeas. Half an apple on the side for some sugar + carbs. You always need protein AND carbs after a workout.

Pumpkin protein bars prepped for the week. These are my life savors when I need a snack, especially on the run. I’m sure I’ll be prepping some more food for the week today as well.

And since this blog post is already random, I’ll leave you off with some fitness inspiration ; )

    i’ve only made OIAJ once- and it was AMAZING! i always forget to save the last little bit in the jar to actually put something in there, ahha!

    I feel really sad when I see people working out and hating it … There are so many workouts, I’m sure they can find one they really enjoy, even if it’s not weight lifting or running… we just need to move, it can be walking, running, cross fit, bikram yoga, cycling, horse riding, skiing, taking a lap dance class, zumba, tennis, soccer… whatever ! just enjoy it =)

    I have never had oats in a jar, or anything in a jar for the matter. For some reason, I feel like I wouldn’t like it haha, just because the jars are so narrow it seems like it would be hard to get everything out. I seriously loooove blended cottage cheese, its my new obsession. I don’t know how, but its so much better than regular. This weekend was fun for me, went out to the bar on saturday and tried out an awesome vodka drink I made. Too bad you were stuck studying, but your almost done!!   21. I just scrape the peanut butter out of the jar…every last bit…but that does sound yummy! And the best thing I did this weekend was buy one of the outfits for my photoshoot! YAY!!!!!

  27. Oh my gosh, you’ve just taken nighttime whipped cottage cheese to a whole new level! I am definitely doing this next time I have an empty peanut butter jar. I’ve actually never tried OIAJ, but I’m pretty sure I’ll enjoy CCIAJ much more. :-D

    Girl, I totally commiserate with you about being swamped right now. I’m done on May 3rd, so I have to power through another week and a half. The pumpkin protein bars are my lifesavers too; I usually pack a few whenever I walk out the door, because I never know how long I’ll be stuck in a cafe or library researching! (They totally beat Starbucks’ pumpkin bread btw).
