Yummy Kale With a Side of Motivation

I wasn’t even going to post this morning because I have an interview this afternoon for an internship (!!!). More on that later ; )

Anyway, my dinner last night was so, so delicious that I just had to share!

I always have a hard time coming up with creative ideas for kale. I really enjoy kale, but I think this may be my new favorite way to make it!

All I did was throw it in a pan with some garlic, oil, and covered it with water and steamed it.

Once it was almost done, I added Italian seasoning and salt, then drained it.

I topped the kale with tomato sauce, sautéed shrimp, and goat cheese. That’s it. SO good! I also had steamed asparagus on the side. Such a great dinner.

That one is my favorite. Okay, I think I’ve shared enough. I have tons more but I’ll save that for another day.

  16. The kale-shrimp-tomato-feta dish looks and sounds AMAZING! You managed to combine a few of my absolute favorite foods onto one plate. How could I not love that? ;)
