What is better than sleeping in on a Saturday morning? And by that I mean 7:30 am.. yup, that is sleeping in for me.
That first sip of coffee makes it even better..
And a lovely stack of delicious Cinnamon Roll Pancakes (by Spoonful of Fit) with fresh blueberries and topped with coconut peanut butter.
I am definitely enjoying my leisure weekend morning over here
It is a rest day, so I didn’t have to wake up early or rush to the gym. Much needed catching up on sleep, too.
I also wanted to thank you all for the amazing comments on my last post. The support and input I get on here is the best part about the blog world. I love you all!
I won a giveaway over on Christina’s blog and I finally received my Marika Fitness running pants. Holy cow, I LOVE them. They are stretchy, not restricting in the least, and so, so comfy.
They are a bit high which is surprising since I’m a giant, but I just roll the top over and it works just as great! I may have even worn them to school multiple times already.
Guess what else happened recently?
YES. I finally went to Trader Joe’s! I was so excited when it opened, but when I first went there it was WAY too crowded so I left. Ha ha. I went on a Sunday morning last weekend and picked up a few essentials.
I didn’t get anything too crazy since I didn’t want to spend a ton of money on stuff I didn’t really need. I got some veggies, which were much cheaper I might add – score. I also picked up some almond milk, Greek yogurt, almond flour, and almond butter.
Lets just say, I think I found my new favorite almond butter. SO good. I can see how people go wild in Trader Joe’s since there are so many unique things to try, but I need to control myself and just try to pick up what I need. Although, the almond flour was a little splurge. I am dying to use it!
Aaaaaand that’s all I have for today. Off to study! It’s going to be a really fun Saturday… ha.
Have you ever used almond flour? What is your favorite recipe?
Is there anything special that you always get from Trader Joe’s?
Do you take rest days on the weekend?

Those pancakes!!! They have my mouth watering even after breakfast. Oooo, I love Trader Joe’s. The nearest one to where I live now is 3 hours away! What a joke. I miss it so much. My favorite recipe with almond flour is probably banana muffins! They’re perfect for a snack or warmed up and topped with a spoonful of nut butter for dessert! Looking forward to seeing what you do with it.

I buy the trader joe’s rosemary balsamic grilled chicken and the sesame sticks. Both amazing. Oh, and the dark chocolate caramel squares and melatonin. I can’t believe it was your first time! You’re going to be hooked from here on out

I love TJ’s, but the closest one to me is about 45 minutes away, so I don’t go too often. They have so many delicious choices! I’m a big fan of their adzuki bean chips but I could seriously put away an entire bag in one sitting!

Those pancakes look so good. I’m jealous I left two years too early to witness a Trader Joe’s in Gainesville. They better open one in South Florida soon!

7:30? sleeping in? When do you get up usually? I mean: I always thought that I am an early riser since I get up at 7:00 on a regular base and call it sleep in, when I get up around 9.

I consider 7:30 sleeping in as well
But I’d definitely have a hard time staying in bed that long if I knew a stack of pancakes was waiting for me! Holy.yum. We don’t have TJ’s up here in Canada, so all I can do is covet all the delicious things I see around the blog world…
Happy Saturday, love!

I went to TJ’s for the first time in November, and yea…definitely splurged. I have almond flour, but I haven’t used it in a while. I should break it out soon!

I love trader joe’s, but don’t make go as much as I would like! It is always fun to try new things from there especially the seasonal products! I have only tried almond flour once before in a protein bar recipe and really liked it. If it wasn’t so costly I would use it a lot more!
Oh my gosh, I hate you, but not really. I’m just jealous of your TJ’s experience! I know what you mean about those 7:30 sleep-ins. It’s been way too long since I’ve slept in that long…I’m lame. Those pancakes look incredible! And topped with coconut peanut butter, hello amazing!

We have a TJ’s here but I never go. I like their chunky PB and that’s about it. It seems like they sell a bunch of junk and try to pass it off as being healthy.

That is very true! Ha ha. I feel like it is definitely more hyped up than it needs to be, but everything is MUCH cheaper, and they have a lot of fresh produce and healthy products for cheaper which I was down for:)
Even 6am is “late” for me! Ugh. I need to build more time for sleep into my life. I agree with everyone else; those pancakes look amazing! Must try.
I like to use almond flour as breading for baked chicken, or in muffins and quick breads. Trader Joe’s = love. I always buy no-salt canned tuna and salmon, almond milk, almond butter, frozen berries, and chipotle hummus. I am really bad about taking rest days. I know that I SHOULD, but I never do.

We really need to learn how to sleep in! lol You definitely should take rest days at least 1, if not more! They are so, so important.

The cinnamon roll pancakes look TO DIE FOR!! I’ve seen them on IG, and am glad to know they’re as amazing as they appear!
Almond flour is one of my baking essentials–it adds great flavor and texture, and doesn’t dry out baked goods like coconut flour tends to.
Happy weekend, love!! You’re looking fab, by the way! <3 xoxo

LOVE TJ’s almond butter. It is seriously so delicious!
Two of my favorite TJ products are their bags of individual portions of almonds (they make the perfect snack) and their pumpkin butter. The pumpkin butter is seasonal, though, so look for it in the fall!

Hi Brittany,
I’m a reader of your blog and have never commented until now. I had a quick question in regards to your previous posts about IBS. My GI doctor thinks I may have IBS and also suggested I try the FODMAPS “diet.” Anyways, I know I’ve see you drink coffee in some of your blogs, but are you a daily coffee drinker? I know some people’s stomach’s don’t tolerate coffee as well as others, and I am probably one those people who don’t tolerate it as well. However, coffee is something I look forward to every morning (mostly for the taste, not the caffeine) and the thought of not drinking it makes me sad!! Do you have stomach issues when you drink it? Also, if you don’t drink it every morning, do you drink any type of alternative drink?
Thanks Brittany!
Hi, Jamie!
I actually do not follow the FODMAPs diet at the moment. I tried it out, but I didn’t have much success honestly. Maybe I didn’t give it a long enough chance, I’m not sure, but I don’t follow it now. I am a daily coffee drinker! I use 1/2 and 1/2 in my morning coffee because I found that I can tolerate it since it is just a small amount. The coffee doesn’t seem to upset me, but I’m not sure if it is because I am used to it. I really don’t know, but I can’t imagine life without coffee haha. Right now for my IBS, all I do is take my probiotics and recently I have been taking glutamine and a digestive enzyme. I’m also just trying to figure out my triggers because my stomach issues are all over the place. IBS is super annoying and pretty much sucks. I wish you the best of luck though! Let me know if you do try it and have success!
Those pants looks so comfy. Love em!!! Glad you finally made it to TJ & did some shopping. Such a wonderful store

That looks pretty much like my standard TJ’s haul. I LOVE their tempeh, sprouted tofu (which comes in a split container, so you can just open up half at a time), and goat’s milk yogurt. I haven’t met one of the hummi (plural for hummus, obviously) I haven’t liked, but the Guacamole Hummus and Mediterranean White Bean are high up on the list.
