Single Serving Protein Pancake w/ No Powder

Mornings are my absolute favorite part of the day. It makes sense that I’m an early riser, and usually have the same lovely routine day in and day out.

Mornings are calm, quiet, and still before the rush of the day gets going. I love sipping my big cup of coffee, while relaxing and leisurely reading blogs.

After a cup or two of coffee, my other favorite part of the morning occurs.

Breakfast.

I often get stuck in a rut and eat the same thing each day because it is fast and easy. However, sometimes when I have a bit more time to spare, I want to switch it up.

I’m always on the look out for new recipes, especially for protein pancakes. During my search, I noticed something – almost every single protein pancake recipe contains protein powder.

That’s not necessarily a bad thing, however, I like getting my nutrients from whole food sources as much as possible. With that being said, this baby was born.

Oh yeah. Single serving protein pancake – minus the protein powder.

Before I get to the recipe, I need to share a secret with you. Whenever I make single serving pancakes, it usually turns into a HUGE mess. It either runs everywhere making it too big, or I flip it too early and it crumbles into a scramble.

I’m going to share a secret with you. The secret to a PERFECT single pancake.

Don’t laugh if you already do this, but I’m usually terrible at pancakes and I almost cried when it came out perfect this morning. Ha! I probably shouldn’t have told you that and just played it off cool…

Anyway, using the smallest pan I can find, covering it, and waiting patiently was KEY. It was perfect when I was ready to flip and already cooked partially on the top.

  • 1/2 c. liquid egg whites
  • 2 tbs. oat flour (or almond to make it paleo)
  • 2 tbs. coconut flour
  • 2 tbs. almond milk
  • Cinnamon
  • Stevia

 

That’s it! Super easy, too. Top it with whatever your heart desires.

What I Ate Recently

Ever since I’ve been home, I’ve been so good about whipping out my good camera to take food photos. I’m so proud of myself.


As usual, I’m going to show what I’ve been eating lately over the past week or so. I rarely ever take a complete days worth of meals, so this is just a peek into what I’ve been eating.

Of course I tried out my new pancake pan, and it works like charm! I made Crystal’s fluffy coconut pancakes and topped it with a healthy chocolate protein frosting and shredded unsweetened coconut. IMG_3943

A homemade turkey burger topped with avocado with a side of tomatoes and green beans/mushrooms cooked in coconut oil.

One of the best salad’s I’ve had in a while! A can of tuna mixed with Greek yogurt and mustard on a bed of spinach with cucumbers, buttercup squash, avocado, a bit of goat cheese and balsamic dressing.

I went like months without eating one salad, but they’re back!
